Creamy Hummus Two Ways: Dried vs. Canned Chickpeas

711

Hummus is a delicious, versatile dip that’s easy to make at home. Today, we’ll prepare it two ways: starting with dried chickpeas for an authentic touch and using canned chickpeas for a quicker option. Let’s dive in!

Hummus with Dried Chickpeas

Ingredients:

  • 1 cup dried chickpeas
  • ½ tablespoon baking soda
  • 1–2 garlic cloves
  • 1–2 teaspoons salt
  • 2 teaspoons cumin
  • ¼–½ lemon, juiced
  • 2–3 tablespoons tahini
  • Olive oil
  • Paprika (for garnish)
  • Ice cubes (optional for texture)

Steps:

  1. Soak Chickpeas Overnight
Start by soaking dried chickpeas in water overnight. This softens them for easier cooking.
  2. Cook the Chickpeas
    • Drain the soaked chickpeas and place them in a pot with fresh water.
    • Add ½ tablespoon of baking soda to help loosen the skins.
    • Boil on medium-high heat for 2 hours.
    • Set aside a handful of chickpeas for garnish. Reduce the heat, cover, and simmer for another 1–1.5 hours, letting most of the water evaporate.
  3. Blend the Chickpeas
    • Transfer the cooked chickpeas to a blender.
    • Blend until smooth, gradually adding garlic, salt, cumin, lemon juice, tahini, and olive oil.
  4. Taste and Adjust
    • Blend, taste, and adjust the seasoning as needed.
  5. Plate and Garnish
    • Spoon the hummus onto a plate and create a shallow well in the center using the back of a spoon.
    • Add the reserved chickpeas, a sprinkle of paprika and cumin, and a drizzle of olive oil.

Hummus with Canned Chickpeas

Ingredients:

  • 1 can (15 oz) chickpeas
  • 1–2 garlic cloves
  • 1–2 teaspoons salt
  • 2 teaspoons cumin
  • ¼–½ lemon, juiced
  • 2–3 tablespoons tahini
  • Olive oil
  • Ice cubes (for creaminess)
  • Paprika (for garnish)

Steps:

  1. Remove Chickpea Skins
    • Drain and rinse the chickpeas.
    • Rub them between your hands to loosen the skins, then remove the skins for a smoother texture.
  2. Blend the Chickpeas
    • Transfer the peeled chickpeas to a blender and give them a first blend.
  3. Add Ingredients
    • Gradually add tahini, olive oil, garlic, salt, cumin, and lemon juice. Start with less lemon juice and adjust to taste.
  4. Secret Ingredient: Ice Cubes
    • Add a few ice cubes and blend again. This step enhances the creaminess of the hummus.
  5. Plate and Garnish
    • Serve the hummus as with the first method: add chickpeas, spices, and a splash of olive oil for a beautiful finish.

Which Method is Best?

Both methods yield creamy, flavorful hummus, but each has its advantages:

  • Dried Chickpeas: Ideal for traditionalists who love an authentic texture and flavor.
  • Canned Chickpeas: Perfect for those in a hurry but still craving homemade goodness.
